There is a long-established and common confusion between Jun and Kombucha. Before anything else, we need to clear up that Jun and Kombucha are different beverages. However, they share the same concept making them closely related.

Benefits

Both Jun and Kombucha are packed with probiotics that are beneficial to the digestive systems. These probiotics are also helpful for restoring the good bacteria in the gut. Additionally, they both contain bacteria, yeast, and organic acids that can help detoxify the body and manage inflammation.

These two beverages share almost similar benefits except that Jun can offer additional benefits because of the honey used for its fermentation. For instance, Jun can build defenses against allergens because of its honey content.

Ingredients

The sweetened tea medium for brewing Kombucha is made with green or black tea and cane sugar while Jun’s sweetened tea medium is made with green tea and honey. They also use different types of SCOBY.

Jun’s SCOBY is a type of SCOBY that can ferment or culture in a medium of honey and green tea. If you are a beginner at brewing, purchasing and using a pure Jun SCOBY could be the most practical option for you. However, this type of SCOBY can be hard to find and obtain.

If you can’t find a pure Jun SCOBY, you can opt to ‘train’ a  Kombucha SCOBY to culture in a green tea and honey medium. Compared to Jun SCOBY, Kombucha SCOBY is much easier to find in different health stores and online shops.

To train your Kombucha SCOBY to ferment Jun tea, simply reduce the amount of sugar and substitute it with honey in two to three batches. Make sure to do this process slowly to give your SCOBY time to adjust to the new medium and avoid any damage to your brew and SCOBY. In this way, the SCOBY can learn to adapt to the new medium more effectively. On the downside, this process may take some time.

Origin

Kombucha was first widely known in Russia. However, many historians believe that it originated in China and was brought to different parts of the world through the silk road. In the US, Kombucha gained popularity in the late 1980s and early ‘90s because of its benefits to the immune system.

Jun’s origin remains a mystery but many believe that Jun also started in Asia, particularly in China and Tibet in 600 B.C. Monks in this period brewed Jun with the belief that it will open their chi or vital life energy. They also believed that drinking Jun will help them reach enlightenment.

In modern times, some people believe that Jun is a subtype of Kombucha. On the contrary, some argue that Jun is the precursor of Kombucha. This is because Jun’s ingredients were used earlier than the modern cane sugar used in making Kombucha. Additionally, black tea is a more processed and modern version of green tea.

Taste

Kombucha can have varying tastes depending on the flavor used and the length of the fermentation period. Mature Kombucha tends to have a strong vinegar flavor and high acidity with a subtle sweet taste. You may also taste some hints of floral, herbal, and fruity flavor depending on the flavorings used.

On the other hand, Jun’s taste is milder and a lot less acidic than Kombucha. Jun’s taste is sweet with a light tartness. You can also taste extra flavors of herbs and fruits depending on the flavorings added. Fermentation

The process of fermentation is the same for Jun and Kombucha. Both of them undergo a primary and second fermentation. The primary fermentation forms the Jun and Kombucha while the second fermentation takes place when you transfer your Kombucha and Jun in bottles. This is the time when you enhance and add flavorings. The second fermentation also adds carbonation to your final brew.

The temperature for brewing Jun also differs from Kombucha. Jun ferments at a relatively cool temperature of 65 to 70℉ whereas Kombucha ferments at 72 to 80℉. 

Availability

At the moment, Jun is not yet as popular as Kombucha. It is not yet widely available in health stores and retailers. However, you can still purchase Jun from many online stores nowadays. Just make sure that they are credible sellers so you can ensure the quality of your healthy beverage.

Meanwhile, Kombucha can easily be purchased in almost all health stores, groceries as well as online shops. More and more people are also brewing this beverage at home. If you are lucky, you might just have the chance to receive Kombucha from a friend who brews it.

Because of its lesser popularity and few brewers, it is not surprising that Jun is more expensive than commercial Kombucha. Is There Alcohol In Jun Kombucha?

Yes. In fact, Jun contains more alcohol content than Kombucha. Jun contains 2% alcohol while Kombucha only has about 0.5%. However, this alcohol content may still vary depending on the brew.

The reason why Jun has higher alcohol content is because of the difference in their sugar content. Honey contains more molecular sugar components than cane sugar. Because of this, the yeast in Jun brew can consume more sugar. The more sugar the yeast consumes, the higher the alcohol percentage also becomes.

Another probable reason is the difference in the temperature for brewing these beverages. Jun requires colder temperatures for brewing. This temperature may influence the alcoholic content of Jun.

What Is The Best Honey For Jun Kombucha?

The best honey for brewing Jun is raw organic honey. Pasteurized or processed honey can cause the Jun to fail from brewing. It may also damage the SCOBY in the long run.
